I am going to sell my GAP AR10. I am thinking about either getting a good bolt gun or a 6.8 precision AR from Noveske. If I decided to go with a Noveske what could I expect for accuracy at 100 yards with 5 shot groups with the best ammo?

Great question! I just built a 6.8 on a WOA SS match 16 in barrel with matching bolt. I have yet to have the time or money to test fire it yet but I have been told to expect 0.5 MOA at 100 yards with it using SSA 115 gr OTM. I would imagine you would get even better accuracy with a Noveske.

I have a 16" WOA barrel on a Larue stealth upper. It’s a midlength system and I’m running an ARP bolt with Daniels Defense FA BCG. Also running a PWS brake. I’m getting sub MOA results at 100 yards and find bullet drop to be pretty similar to my 5.56 out to a bit over 300 yards.
I’ve got a Noveseks Infidel 13.7" in a VLTOR MUR with KX3 brake. I haven’t shot it beyond 200 yards ( 200 yards was just for $hit$ and giggles). At 100 yards I was destroying left over easter eggs with a 4x ACOG. This rifle would be my home/truck gun and doesn’t necessarily benefit from a stainless barrel, however, I’m not likely going to put the volume through it to matter.
IME, either barrel ( Noveske or WOA ) will shoot better than I can and will do just fine. The noveske barrels, I believe, come with a pinned gas block which is nice.

The Noveske 6.8 rifles/uppers and barrels are very accurate.
I have an old Ko Tonics 6.8 (Shaw barrel) and that thing shot MOA all day with 110 Sierra Pro Hunters loaded by SSA.
The Rogue Hunter uppers and barrels in 6.8 from Noveske are great for hunting, nice profile and light weight.
I have a WOA 16" SS barrel that will shoot 5 shot MOA to sub-MOA groups of my handloads. I do not have a Noveske 6.8, but my 18" 5.56 SPR will shot 5 into a 1/2" if it likes the bullet.

Me too. This is a 5 round (I think it was 5 but could have been 3 maybe) group I shot a few years ago out of a Kotonics 16" midweight barrel using good glass at 100 yards. Rounds were factory SSA 115gr OTM Combat rounds. I have 3) 6.8 Kotonics barrels (the 16" mentioned above, a 16" lightweight and an 18" mid weight) and they all are very accurate.
One beautiful thing is…all this good accuracy shown above coming from 16" barrels can be attained from as little as 12" … You can get the same performance out of a 12" barrel that you can from a 16"… Something to contemplate.
Expect sub MOA if you do your part.

I definitely think that the superb single stage Wilson trigger has alot to do with it
