It's all leverage. You're not squatting the bar up, you're not just using your lower back...you're driving your hips forwards which happens to straighten all of those things and lift the bar.
In high school, our strength and conditioning coach told us to **** the bar. I haven't been able to think of a better way to put it.
I'm sure our resident strength guru can explain it better and perhaps even say that I'm wrong...but I'm saying those guys were doing it right, if you go into it with a more vertical back, you actually have to work harder.
ETA: The foul language filter got me. Hump the bar.
